Yushi dofu curry
(fluffy Okinawan tofu)

Yushi dofu is one of Okinawa's traditional ingredients. Ajitoya uses Maesato's tofu, made in an iron pot – one of the old school methods of tofu-making that singes the outside of the tofu, producing a distinctive flavor called, “okoge.”
